Cookbook project puts 1100 classic recipes at fingertips

Over 1100 classic recipes - search by name, ingredient or dishes - are now available at the University of Wisconsin-Stout.

The University Archives and Area Research Center recently online content about 15 cookbooks from the early years of home economics from the university and the curriculum of home economics . The books also contain advice from cooking and baking and other information used for decades by the instructors and students of home economics.

As a book says, revenues have been "tested and approved."

Most cookbooks from the 1890s to about 1925, with some of the most recent volumes. Others will be added.

The university, which opened in 1891, kept up a cookbook until about 1930, and have done sporadically over the next 30 years, said Kevin Thore, who developed the project and has recently retired as Archivist UW-Stout.

"It's part of the heritage of Stout. For many years we had the largest school of home economics in the country, "said Thor."Teachers have used these cookbooks in the cooking classes, and they also held evening classes and taught people in the community to cook."

For a time in the early years of the university, 80 percent of school students were women. They went on to become teachers, dieticians and restaurant owners, he said.

The home economics program, offered when the school opened, advanced training in home economics major from 1918 to 1987. The ramifications of these majors remain, including degree programs in family and consumer science education, dietetics and food systems and technology.

Most cookbooks campus were written and compiled by the faculty, including one by Daisy Kugel, the first director of the School of domestic science.

The index line takes you to the pages as they appear in books. When a search is conducted and a recipe opened, the researcher can scroll forward or back through the whole book.

But if you just want to use spices in your cupboard, the search function of the ingredients may be all you need. It will bring revenues up to 14 spices, including spice cake, Plum Pudding Brown Stew and Country Kitchen, all clickable and printable.

Some recipes come with personal notes, such as milk, butter cake warm. "(It is) a favorite in my family for years, my mother always insists that it is not harder to do that all the packaged cookies, and I agree," wrote Ann Janda, who contributed the recipe in "Stout Favorites" by the Home Economics Club Stout.

Refrigerate for at least six hours, or overnight. Bring to room temperature before slicing.

This dish was very simple to do. Although it appears that there are many steps, it was not difficult at all! And to top it all, it's a delicious dessert (fruit and therefore its good for you, right?)! I like the crust of biscuit! I kept thinking to apply it to other recipes (pie chocolate cream in chocolate cookie crust, perhaps). If you do not have canned pears, this dish is also good with other fruits like peaches.

My only tweak is that I can recommend more than one fruit.I could really use more of pears in this dessert.

Overall it was a great dish and it was so simple, I can not wait to do it again! I am also very happy to try it with different fruits (apple caramel pudding keeps popping in my mind)! If you are looking for a fruity dessert, easy to remember the food and wine, try it and you will not be disappointed!
